Makes 4 tacos. Two tacos per serving.

For the tacos

Burger sauce

Contains milk, wheat and egg in most mayonnaise. Mustard is also included; check product labels.

Make it tonight.

  1. Mix the burger sauce

    Stir the Greek yogurt, mayo, ketchup, mustard, pickle juice and garlic powder together. Set aside while you cook.
  2. Press the beef

    Season the beef with salt, pepper and garlic powder. Divide it evenly between the tortillas, about 3 oz per tortilla. Press each portion in a thin, even layer onto one tortilla.
  3. Sear, then flip

    Heat a large skillet or griddle over medium-high heat. Place the tortilla beef-side down and cook until deeply browned and cooked through, working in batches as needed. Start checking after 2–3 minutes; cooking time depends on thickness and pan heat. Flip carefully.
  4. Add cheese and build

    Scatter cheddar over the beef and cook about another minute, until the cheese melts and the tortilla is toasted. Add lettuce, onion, pickles and burger sauce. Fold and eat while crisp.

Lighten it up

Use reduced-fat cheddar or a little less cheese, and plain Greek yogurt as the base of the sauce.

Bring the heat

Add jalapeños, hot sauce or chili flakes.

Add more crunch

Try shredded cabbage, chopped tomatoes or a handful of extra lettuce.
