Ingredients

Batch size

Choose a batch size above. Portion to your appetite.

For the noodles

Peanut sauce

Contains peanuts, soy and wheat. Check noodle packaging for egg.

Let’s cook

Make it tonight.

  1. Start the tofu

Boil a saucepan of water. Cut the dry tofu into 2 cm cubes. Heat oil in a wide frying pan over medium-high heat; fry tofu for 8–10 minutes, turning occasionally, until golden.
  2. Cook the noodles

Meanwhile, boil noodles for the packet time, adding carrot for the final minute. Drain. Use 4–6 minute noodles to keep this meal quick.
  3. Mix the sauce

Whisk peanut butter, soy sauce, lime juice, maple syrup and 80 ml warm water until smooth. Add another splash of water if needed to make it pourable.
  4. Toss and serve

Reduce the tofu pan to low heat. Add noodles, carrot and sauce; toss for 1 minute until coated and hot. Loosen with water as needed. Divide into two bowls and top with spring onions.

Make it yours.

Add a little heat

Whisk 1 tsp sriracha into the peanut sauce, then adjust to taste.

Swap the noodles

Use rice noodles cooked separately to packet directions. Check soy sauce too if avoiding gluten.

Keep it silky

Peanut sauce thickens as it cools. Add warm water a spoonful at a time just before serving.

Equipment

Wide frying pan, saucepan, colander, bowl, whisk and spatula..
