For the skillet

To finish

Contains milk and mustard. Check ketchup and gherkin labels for additional allergens.

Let’s cook

Make it tonight.

  1. Soften the onion

Heat oil in a large frying pan over medium-high heat. Add onion and cook for 4 minutes, stirring, until softened.
  2. Brown the beef

Add beef and cook for 6–8 minutes, breaking it into small pieces, until browned and cooked through to 71°C / 160°F. Stir in paprika for 30 seconds.
  3. Add the rice

Stir in ketchup, mustard, water, cooked rice and pepper. Break up rice clumps and cook for 3–4 minutes, stirring, until piping hot throughout. Add a splash more water if needed.
  4. Melt and finish

Reduce heat to low. Scatter cheddar over the rice, cover and cook for 2–3 minutes until melted. Top with chopped gherkins and serve straight away.

Make it yours.

Try turkey

Use 400 g minced turkey instead; cook it through to 74°C / 165°F before adding the rice.

Choose your rice

Ready-cooked pouch rice is convenient. Brown rice works too; use 500 g cooked, not dry.

Keep it tangy

Serve extra mustard or chopped gherkins at the table, to taste.

Equipment

Large frying pan with lid, spoon, knife, board and food thermometer..
