Everything you need

Ingredients

Batch size

Choose a batch size above. Portion to your appetite.

For the tray

Honey mustard glaze

Contains mustard. Sausages may contain wheat, milk or sulphites; check the packet.

Let’s cook

Make it tonight.

  1. Start the potatoes

Heat the oven to 220°C / 200°C fan / 425°F. On a large rimmed tray, toss potatoes with 1 tbsp oil, salt and pepper. Spread out and roast for 15 minutes.
  2. Add the sausages

Turn the potatoes. Add the sausages and onion wedges, then roast for 20 minutes, turning the sausages halfway through. Use a second tray if everything is crowded.
  3. Glaze and roast

Mix mustard, honey and lemon juice. Toss broccoli with the remaining 1 tbsp oil and add to the tray. Spoon the glaze over sausages and potatoes. Roast for another 10–15 minutes until potatoes are tender, broccoli is cooked and pork sausages reach 71°C / 160°F in the centre.
  4. Serve

Turn the sausages in the pan juices, divide everything between four plates and serve. If anything browns too fast, cover that part loosely with foil while the rest finishes.

Make it yours.

Switch the sausage

Use chicken sausages, but cook them to 74°C / 165°F in the centre. Follow packet cooking advice.

Change the greens

Swap broccoli for 250 g trimmed green beans. Add for the final 10–15 minutes.

Give it space

Use two trays if needed. Spread potatoes into one layer so they roast rather than steam.

Equipment

Large rimmed roasting tray, mixing bowl, tongs, knife and food thermometer..
