Let’s cook

Make it tonight.

  1. Soak

Put the couscous in a heatproof bowl. Pour over the boiling stock, stir once, cover and leave for 5 minutes. Fluff with a fork. Use instant couscous, not pearl couscous.
  2. Sizzle

Meanwhile, melt the butter in a large frying pan over medium heat. Add the garlic and stir for 30 seconds. Add the drained chickpeas, frozen peas and 2 tbsp water. Cook for 4–5 minutes, stirring, until the peas are tender and the chickpeas are hot. Add another splash of water if the pan dries out.
  3. Toss

Add the spinach and stir for 1–2 minutes until wilted. Turn off the heat. Fold in the fluffed couscous, 1 tsp finely grated lemon zest, 1 tbsp lemon juice and the black pepper.
  4. Finish

Divide between two bowls. Top with the crumbled feta. Taste before adding salt, as the stock and feta can be salty. Serve warm.

Make it yours.

Change the beans

Use one drained 400 g can of butter beans instead of the chickpeas. Fold gently so they keep their shape.

Make it dairy-free

Use 2 tbsp olive oil instead of butter and omit the feta. Check that your stock is dairy-free.

Keep it fluffy

Fluff the couscous with a fork before folding it into the pan. Add the lemon after turning off the heat.

Equipment

Kettle, heatproof bowl with a lid or plate, large frying pan, fork, spatula and fine grater..
