Let’s cook

Make it tonight.

  1. Cook the rice

Prepare the rice according to its package directions. Steam or roast the broccoli for serving.
  2. Prepare the chicken

Cut the chicken into bite-sized pieces. Season with salt and pepper, then toss with the cornstarch.
  3. Cook the chicken

Heat the oil in a pan over medium-high heat. Cook the chicken until golden and cooked through, about 6–8 minutes depending on the size of the pieces. Remove and set aside.
  4. Make the sauce

In the same pan, sauté the garlic and ginger for about 30 seconds. Add the soy sauce, honey, rice vinegar and optional sriracha. Simmer for 2–3 minutes until slightly thickened.
  5. Combine and serve

Return the chicken to the pan and coat in the sauce. Serve over the rice with broccoli, then finish with green onions and sesame seeds.

Make it yours.

Change the chicken

Use chicken breast instead of thighs if you prefer.

Change the grain

Swap the rice for cauliflower rice or quinoa and cook according to its directions.

Change the sweetness

Use maple syrup in place of honey.

More vegetables

Add bell peppers, snap peas or carrots.

More heat

Add extra sriracha or chili flakes.

Vegetarian version

Use tofu instead of chicken and adjust its cooking time.

Equipment

Rice pot, skillet, chopping board and a steamer or roasting tray for the broccoli..
