Roasting tray

Finish and serve

Contains milk. Optional bread contains wheat; vegetable stock may contain celery.

Let’s cook

Make it tonight.

  1. Prepare the tray

Heat the oven to 220°C / 425°F. Spread tomatoes, peppers, onion and unpeeled garlic on a large rimmed tray. Toss with oil, oregano, salt and pepper.
  2. Roast

Roast for 30–35 minutes until vegetables are soft with browned edges. Turn the peppers and onion halfway through. Keep the tomato juices.
  3. Simmer

Let garlic cool briefly, then squeeze cloves from their skins. Transfer all vegetables and tray juices to a saucepan. Add stock, bring to a simmer and cook for 5 minutes.
  4. Blend

Take the pan off the heat. Blend carefully with an immersion blender, keeping its head submerged. Stir in 40 ml cream. Warm gently; add a splash of water if too thick.
  5. Serve

Toast the bread if using. Divide soup between four bowls and swirl the remaining 20 ml cream over them. Serve with toast.

Make it yours.

Keep it dairy-free

Replace cream with the same amount of unsweetened oat cooking cream. Check the stock and bread labels too.

Roast, do not crowd

Use two trays if vegetables overlap heavily. Roasting in a single layer gives better browning.

Save a portion

Refrigerate within 2 hours and use within 3 days. Reheat until steaming hot, stirring and adding a splash of water as needed.

Equipment

Large rimmed roasting tray, saucepan, immersion blender, knife, chopping board and measuring jug..
