Let’s cook

Make it tonight.

  1. Brown the chicken

Heat oil in a large deep frying pan over medium-high heat. Add chicken in one layer and cook for 5–6 minutes, turning to brown. It will finish cooking with the orzo.
  2. Build the pan

Reduce heat to medium. Add garlic and oregano; stir for 30 seconds. Stir in orzo and tomatoes, then pour in stock. Bring to a gentle simmer.
  3. Simmer

Cover and cook gently for 10–12 minutes, stirring often to prevent sticking. Add a splash of water if the pan dries out. The orzo should be tender and the largest chicken piece must reach 74°C / 165°F. Cook longer if needed.
  4. Finish

Stir in spinach for 1–2 minutes until wilted. Turn off the heat; add lemon juice and pepper. Scatter feta over the top and divide into three bowls.

Make it yours.

Change the greens

Use 100 g chopped kale instead of spinach; add it for the final 5 minutes of simmering.

Keep it loose

Orzo thickens as it stands. Stir in a splash of hot water before serving.

Make it dairy-free

Leave out the feta and add a little extra lemon to taste. Check your stock ingredients.

Equipment
