Let’s cook

Make it tonight.

  1. Prep the sides

Pat steaks dry; season with salt and pepper. Steam broccoli over simmering water for 4–5 minutes until tender. Heat rice according to its packet. Keep both warm.
  2. Sear

Heat oil in a large frying pan over medium-high heat. Cook steaks 3–4 minutes per side, adjusting for thickness, until the centres reach 63°C (145°F). Transfer to a plate and rest at least 3 minutes.
  3. Make garlic butter

Lower the heat. Add butter and garlic to the pan; stir 30–60 seconds until fragrant, without browning the garlic. Remove from heat and stir in lemon juice and parsley.
  4. Build

Slice rested steak across the grain. Divide rice and broccoli between two bowls, add steak and spoon over garlic butter and resting juices. Serve hot.

Make it yours.

Different greens

Use 200 g green beans instead of broccoli; steam until tender.

Change the base

Swap the rice for warmed cooked couscous or mashed potatoes.

Better browning

Dry the steaks well and leave space between them. Use a thermometer rather than colour alone.

Equipment

Large frying pan, steamer or saucepan with steamer basket, microwave, tongs, board and food thermometer..
