Fudgy Chocolate Chip Brookies

A fudgy brownie base. A golden cookie top. Two favourite bakes in one square: a cocoa brownie base topped with soft chocolate-chip cookie dough, baked until set and cooled before slicing. Leave small gaps between the cookie dough so the chocolate layer peeks through.

Brownie base

Cookie top

Wheat, egg and milk. Chocolate chips may contain soy; check labels.

Let’s cook

Make it tonight.

  1. Prepare the brownie base

Heat oven to 175°C / 350°F (160°C fan). Line a 20 cm / 8-inch square metal tin with baking paper, leaving an overhang. Whisk melted butter and sugar, then whisk in the 2 eggs and vanilla until combined. Fold in flour, cocoa and salt just until no dry streaks remain. Spread evenly in the tin.
  2. Mix the cookie dough

In a second bowl, beat softened butter with both sugars until creamy, about 2 minutes. Beat in the egg and vanilla. Stir in flour, baking soda and salt just until combined, then fold in the chocolate chips.
  3. Layer and bake

Drop small spoonfuls of cookie dough evenly over the brownie, leaving small gaps; do not swirl. Bake on the middle shelf for 35–40 minutes, until the cookie is golden and the centre is set. A skewer pushed into a brownie gap should come out with moist crumbs, not wet batter; avoid a melted chocolate chip. If needed, bake a few more minutes. Loosely cover with foil if the top browns too quickly.
  4. Cool and cut

Cool in the tin for at least 1 hour before lifting out using the paper and cutting into 16 squares. For especially neat edges, chill once cooled, then use a sharp knife wiped clean between cuts. The stated 2 hours includes cooling time.

Make it yours.

Different chips

Use the same 80 g of dark, milk or white chocolate chips.

Know when it is done

Fudgy means moist crumbs, not raw batter. Check a brownie gap away from a melted chocolate chip.

Clean slices

Cool fully before cutting. Wipe the knife between cuts; chill the cooled slab for firmer edges.

Keep some for later

Store airtight at room temperature for up to 3 days, or freeze separated squares for up to 2 months. Thaw wrapped at room temperature.

Equipment

20 cm / 8-inch square metal baking tin, baking paper, two mixing bowls, whisk or hand mixer, spatula, skewer and knife..
