Muffin batter

Cinnamon coating

Contains wheat, eggs and milk.

Let’s cook

Make it tonight.

  1. Heat and prepare

Heat oven to 190°C / 375°F. Line a standard 12-hole muffin tin with paper liners. Whisk flour, 150 g sugar, baking powder, nutmeg and salt in a large bowl.
  2. Mix the batter

In another bowl, whisk eggs, milk, 80 g melted cooled butter and vanilla. Pour into dry ingredients. Fold just until no dry flour remains; small lumps are fine.
  3. Bake

Divide batter evenly between the 12 liners, about two-thirds full. Bake for 18–22 minutes until golden and a skewer comes out clean. Cool in the tin for 5 minutes, then on a rack for 5 minutes.
  4. Make the coating

Mix 75 g sugar and cinnamon in a shallow bowl. Melt the remaining 50 g butter in a separate bowl.
  5. Dip and enjoy

Brush the warm muffin tops with melted butter, then dip each top into cinnamon sugar. Let the coating settle for 5 minutes before serving.

Make it yours.

Keep them soft

Fold gently and stop when the flour disappears. Overmixing makes muffins tougher.

Make it your spice

Leave out the nutmeg for a simple vanilla muffin. Keep the cinnamon sugar topping for that doughnut-shop finish.

Save for later

Cool completely and store airtight at room temperature for up to 2 days. Freeze uncoated muffins for up to 2 months; thaw, warm and coat before serving.

Equipment

Standard 12-hole muffin tin, paper liners, two mixing bowls, whisk, spatula, rack and pastry brush..
