Crispy chicken

Quick pickle and serving

Wheat and egg. Check bao, panko, mayonnaise and sriracha labels for milk, soy, sesame or other allergens.

Let’s cook

Make it tonight.

  1. Pickle and mix

Thinly slice the cucumber. Toss with rice vinegar, sugar and 1/4 tsp salt; leave for at least 10 minutes, tossing once, then drain. In a separate bowl, mix mayonnaise with sriracha. Keep both chilled while preparing the chicken.
  2. Coat the chicken

Cut chicken into 16 short strips, no more than 1 cm thick. Mix flour, smoked paprika, garlic powder, 1/2 tsp salt and pepper in a shallow bowl. Beat eggs in a second bowl and put panko in a third. Coat each strip in flour, shake off excess, dip into egg, then press into panko. Discard any coating ingredients that touched raw chicken.
  3. Fry and steam

Heat 1 cm of neutral oil in a deep, heavy 24 cm frying pan to 170°C / 340°F. Fry chicken in 2–3 uncrowded batches for 6–8 minutes per batch, turning halfway, until golden and the thickest part reaches 74°C / 165°F. Return oil to temperature between batches. Drain on a wire rack. Meanwhile, steam frozen buns according to their package instructions, in batches if needed, until hot and soft.
  4. Fill the buns

Gently open the warm buns. Divide the sriracha mayo and drained cucumber among them, then add 2 chicken strips to each bun. Serve immediately while the coating is crisp. The recipe makes 8 buns, or 2 per person.

Make it yours.

No bao?

Use 8 small soft dinner rolls instead. Warm them briefly in the oven and split before filling.

Milder mayo

Replace the sriracha with 2 tsp rice vinegar for a mild, tangy mayo.

Keep the crunch

Drain chicken on a rack, drain the cucumber well and assemble only when ready to eat. Keep oil near 170°C / 340°F between batches.

Leftovers

Store chicken, cucumber, mayo and buns separately. Refrigerate within 2 hours and use within 3 days. Reheat chicken in a 200°C / 400°F oven until crisp and 74°C / 165°F inside; steam buns again according to the packet.

Equipment

Knife, chopping board, 3 shallow bowls, small mixing bowls, deep heavy frying pan, tongs, cooking thermometer, wire rack and steamer..
