Everything you need

Ingredients

Batch size

Choose a batch size above. Portion to your appetite.

Biscuit base

Filling and topping

Contains milk and wheat; Biscoff products may contain soy. Check packaging.

Let’s cook

Make it tonight.

  1. Make the bases

Reserve 2 tbsp biscuit crumbs for topping. Mix the rest with melted butter. Divide between four 200 ml glasses and press down gently.
  2. Mix the filling

Beat cream cheese, icing sugar and 60 g Biscoff spread until smooth. In another bowl, whip the cold cream to soft peaks, then gently fold into the cheese mixture.
  3. Fill and chill

Spoon the filling over the biscuit bases. Cover and refrigerate for at least 2 hours until cold and softly set.
  4. Finish

Warm the remaining 40 g spread in a microwave-safe bowl in 5-second bursts until just pourable, not hot. Drizzle over the chilled cups and scatter on reserved crumbs. Serve cold.

Make it yours.

Use what you have

Digestive biscuits work for the base; keep the same biscuit and butter weights.

Make ahead

Keep covered in the fridge for up to 2 days. Add drizzle and crumbs just before serving.

Soft, not sliceable

These are spoonable cheesecake cups. Use full-fat cream cheese and whip the cream before folding for the best texture.

Equipment

Four 200 ml glasses, two mixing bowls, hand mixer or whisk, spoon and microwave-safe bowl..
