Let’s cook

Make it tonight.

  1. Mix the filling

Drain the tuna very well and flake into a bowl. Finely chop the drained pickles. Stir tuna, mayonnaise, Dijon, pickles and black pepper together. Grate the cheddar.
  2. Fill and fold

Lay out the four tortillas. On one half of each, add 15 g cheddar, one-quarter of the tuna mixture and another 15 g cheddar. Fold the bare half over and press gently.
  3. Cook two batches

Heat 1 tsp oil in a large non-stick frying pan over medium heat. Add two folded quesadillas without overlapping. Cook for 2–3 minutes per side, turning carefully, until golden with melted cheese and a hot filling. Repeat with the remaining 1 tsp oil and two quesadillas. Lower the heat if they brown before the cheese melts.
  4. Slice and serve

Rest each batch for 1 minute before cutting into wedges. Serve immediately, allowing two folded quesadillas per person.

Make it yours.

Change the cheese

Use 120 g grated mozzarella instead of cheddar. Keep the same filling and method.

Swap the pickles

Use 40 g finely chopped spring onion instead of pickles for a milder filling.

Keep them crisp

Drain tuna and pickles thoroughly. Cook over medium heat and avoid overlapping the quesadillas in the pan.

Equipment

Large non-stick frying pan, bowl, fork, grater, knife, chopping board and spatula..
