For the wraps

Lemon yogurt

Contains eggs, milk and wheat. Check tortilla labels for additional allergens.

Let’s cook

Make it tonight.

  1. Mix and warm

Mix yogurt with lemon juice. Whisk eggs with black pepper in a separate bowl. Warm each tortilla in a dry 24 cm nonstick frying pan over medium heat for 15 seconds per side; transfer to a plate and cover.
  2. Wilt the spinach

Add 1 tsp oil to the pan. Add spinach and cook for 2 minutes, stirring, until wilted and excess moisture has evaporated. Transfer to a bowl and divide in half.
  3. Cook the first omelette

Reduce heat to medium-low. Add 1/2 tsp oil and half the beaten eggs. Tilt to spread; cook for 2–3 minutes until almost set. Scatter half the spinach and 30 g feta over one half. Fold over and cook for 1 minute until the egg is fully set.
  4. Repeat

Slide the omelette onto a tortilla. Repeat with the remaining 1/2 tsp oil, eggs, spinach and 30 g feta for the second tortilla.
  5. Wrap and serve

Spread half the lemon yogurt alongside each omelette. Fold the tortilla sides inward and roll snugly around the filling. Cut in half and serve immediately.

Make it yours.

Change the greens

Use 100 g finely shredded chard instead of spinach. Cook until tender and let excess moisture evaporate before adding to the eggs.

Keep it tidy

Use soft, warm tortillas and avoid adding liquid from the spinach bowl. Keep the yogurt inside the wrap so the tortilla stays easy to hold.

Make it yours

Swap feta for 60 g grated cheddar. For a little heat, add a pinch of chilli flakes when whisking the eggs.
